Sydney Younggreen De Souza's journey from a pre-med student to co-owner of The Regular is a tale of culinary passion and entrepreneurial spirit. Initially bound for medical school, her fascination with food and nutrition led her to the bustling farmer's markets of Boulder, where she discovered her true calling. Transitioning from blogging to professional kitchens, Sydney honed her skills alongside Chef Omar at Her Name Was Carmen, delving into Peruvian cuisine. Her path intersected with Brian De Souza’s, her now husband, at Her Name Was Carmen –– an early-on New York City kitchen job –– where they found a shared passion for Peruvian cuisine and culinary innovation. Together, they ventured into private cheffing before founding The Guest, a precursor to their dream restaurant.
Upon moving to Colorado, they immersed themselves in the local food scene, working at esteemed establishments like Corrida and Frasca. Sydney's diagnosis with Celiac disease further fueled her dedication to creating an inclusive, well-rounded pastry program at The Regular, where she also oversees business operations and ensures exceptional guest experiences.
