By way of Peru, Chef Brian's culinary journey is a testament to his unyielding passion for creativity and flavor. From his early years in Peru and his time exploring Europe and Asia on solo travel adventures, Brian draws on these eclectic experiences to shape his unique cooking style, blending his worldly lessons with his deep-rooted passions.
Inspired by a future that came to him in a dream, Chef Brian transitioned his artistry from music to the kitchen, his skills quickly boosting him through the ranks in New York City kitchens. He met his now wife, Sydney Younggreen De Souza, at Her Name Was Carmen –– one of his early kitchen jobs in NYC –– and rose up through the ranks before eventually making the move to Colorado. In Colorado, Brian started a private dinner series with Sydney called The Guest. The pair went on to open The Regular in downtown Denver as a culmination of their shared life experiences and culinary passions.
A true artist at his core, Chef Brian encourages creativity and innovation, pushing boundaries to create memorable dining experiences. Combined with his proud Peruvian heritage, Brian’s love for food and hospitality makes an impact on every dish he creates, leaving a lasting impression on diners.
